Keto Thumbprint Cookies

HAPPY NEW YEAR.. I hope everyone had a safe and joyous holiday season.

I made some thumbprint cookies with chocolate ganache filling. I used the thumbprint cutters from Williams Sonoma. For this recipe I used Carbquik flour but almond flour works as well.

1 1/2 cups Carbquik
1/2 cup salted butter, cold and cut into chunks
1/2 cup swerve granular
1 egg
1/2 tsp vanilla extract
1/4 tsp almond extract

This is 50!!!

50 and FABULOUS – HAPPY 50th BIRTHDAY TO ME….

I took a little break to celebrate my 50th, what should have been a week somehow tuned into months, but here I am. It’s another 365 days of existence and I’m thankful to the most high above for the grace to be alive. God I trust you. I trust your design. You’re the greatest architect.

I woke up on my 50th looking like a “Queen-ager”, grateful. With my family, grateful. Grateful for all my blessings, those seen, those unseen, and those given to others in need. I originally had scheduled time off as my family and I would have been celebrating in Italy, but 2020 had other plans. No worries..nothing before it’s time. Still grateful!

Can’t wait to see where this new journey leads…And hopeful that traveling will be a thing again in 2021!

Keto Chocolate Cupcakes W/ peanut butter and chocolate frosting

I am definitely a lover of cupcakes, vanilla, chocolate, red velvet… you name it I love it. Fun fact about me – I stood in line for an hour for an order of Georgetown Cupcakes, they are to die for. While my cupcakes are not Georgetown Cupcakes I think they taste pretty delicious.The coffee in the recipe is optional, but if you can please use it. Keto Avocado Toast w/Bacon and eggs

Classic breakfast or brunch – avocado toast, scrambled eggs and bacon 🥓. This is another example of the 90 second bread, this time I added flax seed powder. For the avocado, I simply used a medium one, sliced and chopped in a small bowl and added Trader Joes Everything but the Bagel Seasoning. Delish! Eggs were scrambled in butter. The bread recipe made 4 slices.

For the 🍞
2 tbsp Carb Quik Flour
2 tbsp olive oil
1 tbsp almond flour
1 tbsp coconut flour
1 large egg
1 tsp flax seed powder ( I basically grounded the flax seed in my mini blender)
Dash of salt

Combine all ingredients in a small bowl and mix until all the ingredients to make a batter.

Pour in a greased bowl or ramekin and bake at 350 degrees for 12 minutes or until a toothpick comes out clean.

You can also microwave for 90 seconds.

Slice bread in 1/2, add 1 tbsp butter in a skillet, once heated add bread. I flip after 1-2 minutes.

Keto 90 Second Hamburger Bun

Made this delicious cheese burger for lunch. The 90 second bread is a staple if you follow the keto lifestyle, I often-time will bake my batter instead of microwaving unless I’m pressed for time. I try to add different things to my bread or bun and found that incorporating the Carb Quik flour made it extremely fully and soft – just like a regular bun, I was very happy. I used my muffin top pan to use and the buns came out beautifully. The recipe below made 2 buns, but you could potentially make 3 buns (top and bottom).

Notes – I find that greasing the muffin top pan with butter works a lot better than Pam, they slid right out when removed from the oven.
