Plain bagel – you’re my everything!!
Everything bagel – ughhhhh you’re so plain 😂🤣. Me and my crazy humor. Bagels are everything and even better when the taste is simply amazing. I’ve tried making and boiling the bagels prior to baking, but the dough literally crumbles in the water. I’m still working on the dough, but for now this will do. I prefer baking on a Silpat baking sheet, but you can use a regular cookie sheet and double-up on the parchment paper.
I made 10 bagels from this batch.
2 cups shredded mozzarella cheese
2 oz cream cheese
1 1/2 cup almond flour
1 tsp baking powder
1 medium eggs (room temp)
Pinch of salt
Preheat the oven to 350 degrees, and line a cookie sheet with parchment paper (if not using a Silpat baking sheet).
In a large bowl mix together the almond flour, salt, and baking powder. Create a hole in the pan and set aside.
In another bowl add the mozzarella cheese and cream cheese, melt in the microwave in 30 second intervals, stirring each time. This should only take about 90 seconds.
Remove and stir as much as you can until the cheese, cream cheese, and egg start coming together. Pour into the center of the dry ingredients.
Using a spatula start folding the dry ingredients until the dough is combined. The dough will be sticky, but keep folding until it’s smooth. If you find the dough is too sticky don’t be afraid to add more almond flour (add in intervals of 1 tbsp until you get the consistency).
Cut dough into ten equal pieces, you can shape the bagels in two ways, you decide which works for you – 1. Roll each piece into a log and use a donut pan to shape. If you don’t have a donut pan you can roll into a log and press the ends together. 2. This is the way I do them – I simply roll into a ball in the palm of my hands and use my index finger to create a hole, then shape.
Place on lined sheet or Silpat, if you’re decide to add a topping – apply a little water to the tops and sprinkle with poppy seeds sesame seeds or Trader Joes Everythingbutthebagel seasoning.
Bake for 15-20 minutes and allow to cool. Enjoy with cream cheese or even better Lox and cream cheese.
