Comfort food at its finest..Late lunch…Pepperoni Pizza. I normally use fathead dough but this dough has no cheese and no egg. No need to get delivery when you have a recipe this good! This was such an amazingly delicious pepperoni pizza recipe! You get a homemade crust and layers of flavorful toppings.
For the Dough
2 cups almond flour
1/4 cup carbquik_central flour (sub almond flour)
1 tsp xanthan gum
2 tsp baking powder
3/4 cup + 2 tbsp water
1/4 cup olive oil
salt
choice of toppings – I went with pepperoni.
Preheat oven to 350 degrees.
In a mixing bowl, whisk together your almond flour, carbquik, xanthan gum, salt, and baking powder.
Pour in the oil and warm water. Fold thoroughly until a dough forms.
Place the dough onto a piece of parchment paper and use wet hands to make it flat and a pizza shape. NOTE: do not roll with a rolling pin & extra parchment. It will not work and the dough will just stick to the parchment.
Make sure the middle of the dough (where you want your toppings) is fairly thin. It does rise a little in the oven and it’s best thin and crunchy.
Once you have a circle of dough, poke with fork and bake for 10-20 minutes ( I did 20 minutes because the crust was still kinda soft at 10 minutes) at 350 degrees.
Remove from oven and add toppings. I used a little tomato sauce, mozzarella cheese and pepperoni. I did sprinkle a little parmesan cheese on the edges.

Bake at 350 degrees for 15-20 minutes or until the crust is a golden brown.
