Had to make this favorite of mine again. This is a staple in Jamaica and I remember making with my grandmother ( I miss her). Yep still taste amazing! Perfect for a snack, dessert or whenever you’re craving a sweet treat.
1 cup roasted peanuts
1/4 cup butter
1/2 cup Swerve Sweetie granular sugar
2 tsp ground ginger (for a little heat)
1 tsp vanilla extract
Line a baking sheet with parchment paper.
Mix all ingredients on medium flame until it start to boil, stirring constantly. I left it going about 5 minutes more after boiling (this allows the mixture to thicken and will be crisper when cooled).
Pour on parchment paper and spread out evenly- cool in refrigerator. I just broke apart once cooled.
