Made some fried zucchini for dinner last night with a zucchini from my garden. Instead of using as a noodle or sautéing I decided to fry them. I find that using the Carbquik flour gives it a much better taste than the almond flour, I also didn’t add pork rind this time around. This is such a a delicious way to use the zucchini. For the fried zucchini you’ll need the following:
1 medium zucchini
1 egg
¾ cup carbquik_central flour
½ cup parmesan cheese
Coconut oil oil for frying
Seasoning salt
Garlic powder
Onion powder
Black pepper
Trim ends off zucchini and slice into 1/2″ slices. I got about 18 slices.
In a small bowl beat eggs with salt and pepper. In a separate shallow container combine parmesan cheese, flour, seasoning salt, garlic and onion powder, and black pepper.
Separate the flour mix into 2 shallow bowls.
Pour oil into a pan to ½” deep and heat over medium heat.
Dredge zucchini in flour (1st bowl) , dip in egg and finally dip in 2nd bowl of flour mix. Repeat with remaining slices.
Add zucchini to the pan, a few at a time (don’t crowd) cooking 2-3 minutes per side.
Drain on paper towels. Season with salt if desired. Serve with sugar-free ketchup and sriracha, I’ve also heard that ranch dressing is pretty good.
