Fall is my favorite time of year, I love the colors, the crisp breeze, and all the flavors, I just love everything about it! It’s the season for HUGE comfy sweaters, scarves, comfort soups, crock pot cooking, hot beverages, and pumpkin flavored everything!! This maple bacon donut is everything and who doesn’t like bourbon, that’s right I said bourbon – Think ultra tender and moist, all topped off with a scrumptious ‘maple’ glaze and crispy bacon bits! The ingredients below made four donuts, if you want just two you would divide in half. This is just a quick easy way to have a couple donuts without going crazy (that is just for me because I could eat six donuts at a time back in the day!
For four donuts:
- 2 eggs (room temperature)
- 2 Tbsp coconut flour
- 2 Tbsp melted butter
- 4 Tbsp Swerve granular sugar
- 1 tsp baking powder
- splash of maple extract
- Bourbon
Pre-heat oven to 350 and grease donut pan.
Combine the eggs, flour, sugar, melted butter, baking powder, and a splash of maple extract in a medium bowl. Mix ingredients well to make a batter.
Add to greased donut pan and bake until golden brown (about 12-15 minutes). While the donuts are baking cook your bacon slices, I used about two slices, and crumbled.
You can also make your glaze: mix bourbon (I used about 1 tsp), Swerve confectioners sugar, and a drop of maple extract until you have the right texture (As you can see from my pics the glaze was a but runny, I ran out of confectioners sugar) the taste was still amazing!
Remove donuts from oven and allow to fully cool on cooling rack. Add your glaze and top with BACON.
