Made this delicious cheese burger for lunch. The 90 second bread is a staple if you follow the keto lifestyle, I often-time will bake my batter instead of microwaving unless I’m pressed for time. I try to add different things to my bread or bun and found that incorporating the Carb Quik flour made it extremely fully and soft – just like a regular bun, I was very happy. I used my muffin top pan to use and the buns came out beautifully. The recipe below made 2 buns, but you could potentially make 3 buns (top and bottom).
Notes – I find that greasing the muffin top pan with butter works a lot better than Pam, they slid right out when removed from the oven.
For the bread I used:
2 tbsp almond flour
2 tbsp Carb Quik Flour
1 tbsp coconut flour
1 tbsp olive oil
1 tsp baking powder
2 eggs ( you can use 1 large)
Dash of salt
Topping – Trader Joes Everything But The Bagel Seasoning
Preheat oven to 350 and grease muffin top pan (I used butter), you can also use medium ramekins.
In a medium bowl add the flours, baking powder, and salt. Whisk to combine.
Add the butter and eggs and whisk until batter is fluffy (about 2-3 minutes)
Spoon into muffin top pan and sprinkle everythingbutthebagel seasoning on 2 of the buns
Bake for 10 minutes or until a toothpick comes out clean and dry
Remove and let it sit for a couple minutes, remove and enjoy!
