Keto Braided “Nekstella” Bread #yum
The Nekstella Chocolate Hazelnut Spread tastes just like Nutella, so good.. I made the dough in the #cuisinart bread maker and chilled overnight. Baked for 10 minutes at 375 degrees, lowered to 350 and baked an additional 20 minutes. I found this recipe at http://www.glurenfreeonashoestring.com, I obviously changed the ingredients to make this keto friendly.

I have tried making keto versions of bread in the oven and while they came out okay, I was still missing that bread-like texture and taste. Let me tell you about this bread maker – if you love making homemade bread this is the machine to have, it is compact (silver and black goes well with my kitchen design). There is no work to be done other than adding the ingredients to the pan, this machine is fully automated, it not only kneads, but also rise and bake your bread. HAPPY NEW YEAR.. I hope everyone had a safe and joyous holiday season.
I made some thumbprint cookies with chocolate ganache filling. I used the thumbprint cutters from Williams Sonoma. For this recipe I used Carbquik flour but almond flour works as well.
1 1/2 cups Carbquik
1/2 cup salted butter, cold and cut into chunks
1/2 cup swerve granular
1 egg
1/2 tsp vanilla extract
1/4 tsp almond extract

These were a bit tart and tangy, but it’s just the way I like it. I can have them year round..This was the first batch I made and I was really happy with how they turned out. Super delicious!
For the Crust:
6 tbsp butter
2 cups almond flour
1/3 Swerve granulated sugar
1 tbsp freshly grated lemon zest

I am definitely a lover of cupcakes, vanilla, chocolate, red velvet… you name it I love it. Fun fact about me – I stood in line for an hour for an order of Georgetown Cupcakes, they are to die for. While my cupcakes are not Georgetown Cupcakes I think they taste pretty delicious.The coffee in the recipe is optional, but if you can please use it. Classic breakfast or brunch – avocado toast, scrambled eggs and bacon 🥓. This is another example of the 90 second bread, this time I added flax seed powder. For the avocado, I simply used a medium one, sliced and chopped in a small bowl and added Trader Joes Everything but the Bagel Seasoning. Delish! Eggs were scrambled in butter. The bread recipe made 4 slices.
For the 🍞
2 tbsp Carb Quik Flour
2 tbsp olive oil
1 tbsp almond flour
1 tbsp coconut flour
1 large egg
1 tsp flax seed powder ( I basically grounded the flax seed in my mini blender)
Dash of salt
Combine all ingredients in a small bowl and mix until all the ingredients to make a batter.
Pour in a greased bowl or ramekin and bake at 350 degrees for 12 minutes or until a toothpick comes out clean.
You can also microwave for 90 seconds.
Slice bread in 1/2, add 1 tbsp butter in a skillet, once heated add bread. I flip after 1-2 minutes.
