Keto Fried Zucchini

Made some fried zucchini for dinner last night with a zucchini from my garden. Instead of using as a noodle or sautéing I decided to fry them. I find that using the Carbquik flour gives it a much better taste than the almond flour, I also didn’t add pork rind this time around. This is such a a delicious way to use the zucchini. Keto Chocolate Donuts

This is another food that goes very quickly, I love making donuts, it is simply delicious. I love adding toppings to my donuts so for a few I added some shredded coconut, literally the best!. What are some of your favorite donut flavors? My absolute favorite is bacon and maple (recipe coming soon) which in my opinion should be eaten everyday and should not be shared (but that’s just me).

Taco, But it’s Not Tuesday

Tacos are my absolute favorite, and following a keto lifestyle makes it difficult at times to enjoy the hard taco shells, well these taco shells are amazing. Made totally from cheese, which in my opinion gives it a much better taste. I can have these tacos all day! This recipe is super, and you can top it off with a protein of choice. I went with ground beef this time around and used mozzarella cheese instead of cheddar. I made 4 servings from this recipe. You will need the following ingredients for the shells-

Homemade Marinara Sauce

Nothing Beats Homemade Marinara Sauce

2 tbsp coconut oil
1/2 chopped medium yellow or vidalia onion (makes about 1/2 cup)
2-3 tbsp chopped garlic or 3 garlic cloves finely minced
28 oz crushed tomatoes or diced tomatoes
1/2 tsp dried oregano
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
1 tbsp fresh basil, finely chopped

Place a medium saucepan over medium heat and add the oil. Once oil is heated, add chopped onion stirring often until soft (about 3-5 minutes). Add garlic and stir (about 1 minute)

Stir in tomatoes, oregano, salt and pepper and bring to a light boil. Reduce heat and simmer partially covered for 15 minutes.

Finally, stir in 1 tbsp chopped fresh basil and turn off the heat

Keto Chicken Parmesan

Prep Time: 10 minutes  Cook Time: 25 minutes  Total Time: 35 minutes

This chicken parmesan dish was a huge hit at dinner last night. The crust is a mixture of CarbQuik flour, pork rinds, and parmesan cheese, topped off with homemade marinara sauce and melted mozzarella cheese. This is super easy to make and amazingly delicious. You’ll need a few staples already in your pantry and the marinara sauce was homemade, you can also use a store-bought version. This was served with Zeroodles low carb spaghetti.
