Keto Avocado Toast w/Bacon and eggs

Classic breakfast or brunch – avocado toast, scrambled eggs and bacon 🥓. This is another example of the 90 second bread, this time I added flax seed powder. For the avocado, I simply used a medium one, sliced and chopped in a small bowl and added Trader Joes Everything but the Bagel Seasoning. Delish! Eggs were scrambled in butter. The bread recipe made 4 slices.

For the 🍞
2 tbsp Carb Quik Flour
2 tbsp olive oil
1 tbsp almond flour
1 tbsp coconut flour
1 large egg
1 tsp flax seed powder ( I basically grounded the flax seed in my mini blender)
Dash of salt

Combine all ingredients in a small bowl and mix until all the ingredients to make a batter.

Pour in a greased bowl or ramekin and bake at 350 degrees for 12 minutes or until a toothpick comes out clean.

You can also microwave for 90 seconds.

Slice bread in 1/2, add 1 tbsp butter in a skillet, once heated add bread. I flip after 1-2 minutes.

Keto 90 Second Hamburger Bun

Made this delicious cheese burger for lunch. The 90 second bread is a staple if you follow the keto lifestyle, I often-time will bake my batter instead of microwaving unless I’m pressed for time. I try to add different things to my bread or bun and found that incorporating the Carb Quik flour made it extremely fully and soft – just like a regular bun, I was very happy. I used my muffin top pan to use and the buns came out beautifully. The recipe below made 2 buns, but you could potentially make 3 buns (top and bottom).

Notes – I find that greasing the muffin top pan with butter works a lot better than Pam, they slid right out when removed from the oven.
