I am definitely a lover of cupcakes, vanilla, chocolate, red velvet… you name it I love it. Fun fact about me – I stood in line for an hour for an order of Georgetown Cupcakes, they are to die for. While my cupcakes are not Georgetown Cupcakes I think they taste pretty delicious. The coffee in the recipe is optional, but if you can please use it. It definitely takes the cupcakes to another level. For the cupcakes you’ll need –Continue Reading
Classic breakfast or brunch – avocado toast, scrambled eggs and bacon 🥓. This is another example of the 90 second bread, this time I added flax seed powder. For the avocado, I simply used a medium one, sliced and chopped in a small bowl and added Trader Joes Everything but the Bagel Seasoning. Delish! Eggs were scrambled in butter. The bread recipe made 4 slices.
For the 🍞
2 tbsp Carb Quik Flour
2 tbsp olive oil
1 tbsp almond flour
1 tbsp coconut flour
1 large egg
1 tsp flax seed powder ( I basically grounded the flax seed in my mini blender)
Dash of salt
Combine all ingredients in a small bowl and mix until all the ingredients to make a batter.
Pour in a greased bowl or ramekin and bake at 350 degrees for 12 minutes or until a toothpick comes out clean.
You can also microwave for 90 seconds.
Slice bread in 1/2, add 1 tbsp butter in a skillet, once heated add bread. I flip after 1-2 minutes.
Made this delicious cheese burger for lunch. The 90 second bread is a staple if you follow the keto lifestyle, I often-time will bake my batter instead of microwaving unless I’m pressed for time. I try to add different things to my bread or bun and found that incorporating the Carb Quik flour made it extremely fully and soft – just like a regular bun, I was very happy. I used my muffin top pan to use and the buns came out beautifully. The recipe below made 2 buns, but you could potentially make 3 buns (top and bottom).
Notes – I find that greasing the muffin top pan with butter works a lot better than Pam, they slid right out when removed from the oven.Continue Reading
Fall is my favorite time of year, I love the colors, the crisp breeze, and all the flavors, I just love everything about it! It’s the season for HUGE comfy sweaters, scarves, comfort soups, crock pot cooking, hot beverages, and pumpkin flavored everything!! This maple bacon donut is everything and who doesn’t like bourbon, that’s right I said bourbon – Think ultra tender and moist, all topped off with a scrumptious ‘maple’ glaze and crispy bacon bits! The ingredients below made four donuts, if you want just two you would divide in half. This is just a quick easy way to have a couple donuts without going crazy (that is just for me because I could eat six donuts at a time back in the day!Continue Reading
I’m going to go out on a limb here and say I nailed this! Chinese take-out is one of the things I really miss following this lifestyle, but with everything it can be modified. This was super easy to make and the taste was even better. This is one recipe I use monthly for when I need a solid take-out recipe. For this recipe you’ll need the following ingredients –Continue Reading
These mugcakes were baked, rather than being microwaved, I’m honestly not a huge fan of making it in the microwave. I dunno🤷🏾♀️🤷🏾♀️. I find the taste to be better- not so “eggy”. There are so many great ideas and with the fall season, now is the perfect time for making some pumpkin flavored mug cake. This batter was enough for 2 ramekins , you will need the following ingredients-Continue Reading
